Broccoli Casserole

Vegetable cheesy sidedish

Bake at 350 until firm, 30-45 min
Ingredients:
3 - eggs, beaten slightly
1 can  - cream of mushroom soup
1 cup - mayonnaise
1 cup - sharp grated cheese
1/4 C. - chopped onion
5 Tbsp - butter
2 lbs - broccoli, fresh or frozen
1 cup - crushed Ritz or Club crackers
1 tsp - salt and/or pepper to taste

Directions:
1.  Chop broccoli into bite-sized pieces, cook or steam until almost tender.  Drain very well and set to the side.

2.  Mix mushroom soup, mayonnaise, eggs, cheese, onion, and (salt optional) and pepper in a large bowl.

3.  Fold in the drained broccoli and turn into a greased baking dish.

4.  Chip butter over the top of the mixture and sprinkle the crackers on top

5.  Bake at 350 until firm. Feeds 6-8 people or just two of my sons!
